Cinnamon, Honey, Walnut Banana Crepes


Today's been a very productive day. The sunny and quite warm weather made me feel energetic and ready to tackle some of the clutter hotspots in our home. To celebrate today's accomplishments I made these delicious crepes that include a healthy and nutritious combo of bananas, cinnamon, honey and walnuts.


Ingredients
  
Batter:
 
1 egg
   
200 gr flour 

 250 ml milk

250 ml sparkling mineral water

a pinch of salt

cooking oil or cooking spray for the pan


 Filling:

banana slices

honey

cinnamon

chopped walnuts

 
    Instructions

1.  Mix all of the ingredients well so that the batter is thin and lump free.
2. Lightly grease and heat a frying pan. 
3. Scoop the batter with a ladle and pour into the center while moving the pan in a circular motion and tilting it to spread the batter evenly. 




Assembling

Spread the banana slices, honey, cinnamon and chopped walnuts on the crepe. Fold the crepe to form a square and drizzle some honey on top.

  3. We love crepes in my house! Well, I make Russian pancakes which are pretty much the same thing. Anyway, I never thought to use sparkling water in them. I'll have to think about that next time! I love the fillings that you used, too!

    1. Thanks Yuliya. The sparkling water makes them full of small air bubbles and they are more flexible because of that.
