We love pasta. It's one of the things that somehow creeps into a lot of our meals and we devour it pretty fast, especially when it's topped with this delicious homemade sauce.
The sauce consists of 6 basic ingredients but you could easily switch things up by adding different veggies and herbs and have a completely new sauce every time. And since we have our own garden, I usually make large amounts of the sauce which makes it both healthy and budget-friendly.
2 kg peeled tomatoes, ground in a meat grinder
2 eggplants, peeled and ground in a meat grinder
50 gr sugar
150 ml oil
100 ml water
salt to taste
garlic, finely chopped, to taste
handful of parsley
1. Combine everything in a large saucepan and cook on medium heat for 90 minutes, stirring occasionally.
2. If you would like to store it for future use, pour it into jars while it's still hot and close the lid. Let it cool and then transfer jars to the refrigerator or a cool and dark place.
